Storing cakes and icing tips...

I usually bake my cakes a few days ahead and store them in the freezer. First reason is because it frees up my time and I can concentrate on decorating. Second reason is a frozen is MUCH easier to work with..It is very simple (obviously). All I do after I bake a cake, is let it cool for a couple of hours and wrap the cake in several layers of Glad Press-n-Seal. When I am ready to decorate, I remove the plastic wrap and let sit until it starts to thaw. Otherwise, if you start icing right away condensation builds on the cake. You will find that it is much easier to icing the cake.
